Cake Layer
22 g cocoa powder
½ tsp instant coffee (optional)
100 ml boiling milk
100 g unsalted butter (softened)
125 g caster sugar
1 egg
½ tsp vanilla extract
100 g all-purpose flour
¼ tsp baking soda
½ tsp baking powder
¼ tsp salt
Chocolate Mousse
200 g semi-sweet chocolate (chopped)
100 g milk chocolate (chopped)
2 egg yolks
50 g caster sugar
2 egg whites
Pinch of salt
400 g whipping cream (cold)
Chocolate Glaze
75 g semi-sweet chocolate
75 g whipping cream
For Serving
1 pint vanilla ice cream

  • 8-inch cake tin for baking cake

Method
 

  1. Preheat oven to 180°C (350°F).Mix cocoa powder and coffee with boiling milk until smooth. Let cool.Beat butter and sugar until creamy. Add egg and vanilla.Mix dry ingredients separately, then combine with wet mixture.Pour into greased pan and bake for 20–25 minutes. Cool completely.

  2. Melt chocolates and let cool slightly.Whisk egg yolks with sugar, then mix in chocolate.Beat egg whites with salt until stiff peaks form. Fold gently.Whip cream to soft peaks and fold into mixture.

  3. Place cake on serving plate. Spread mousse evenly on top. Chill for 1–2 hours until set.
